What is agave?
Agave has been cultivated for centuries, first by the Native American population and then in Europe, when agave plants were brought back by the Spaniards and Portuguese in the 17th century. Agave syrup is a honey like sweetner made from the Blue Agave plant in Mexico. Agave is less viscous than honey and because of its high percentage of fructose (90% fructose -10% sucrose), Agave has a very low GI rating. Dark Agave is as sweet as the light Agave whilst retaining the full flavour of the agave nectar, whereas the light agave is sweet without the rich agave taste.
What makes agave superior to sugar?
Sugar is a processed sweetener that has no nutritive value, other than calories. And agave, as compared to other sweeteners, has a desirable low-glycemic index. This means that when consumed, it won’t cause a sharp rise or fall in blood sugar.
